1 lb. spicy bulk Italian sausage, browned and drained
1 c. finely chopped onion
1 c. finely chopped green pepper
1 T butter
1 28-oz. can chopped tomatoes, with liquid
1 small can mushrooms, stems and pieces, drained
1 small can sliced ripe olives, drained
2 t. dried oregano
½ t. red pepper flakes (or to taste—optional)
12 oz. cooked spaghetti
2 c. grated Cheddar cheese (or half Cheddar/half Mozzarella)
1 can mushroom soup mixed with 1 can water
¼ c. fresh-grated Parmesan

Preheat oven to 350 degrees. In a large Dutch oven, brown the sausage, remove from pan and set aside. In the same pan, add the butter and sauté onion and green pepper until softened. Add tomatoes with liquid, mushrooms, olives, oregano and red pepper flakes (if using). Stir in sausage. Simmer for 10 minutes. Place half the cooked spaghetti in a 9 x 13 greased casserole. Top with half the meat mixture, then half the soup mixture. Sprinkle with 1 cup of Cheddar cheese. Repeat layers once. Top with Parmesan. Bake, uncovered, for 30 to 35 minutes or until hot and bubbly.
