2 oz. unsweetened chocolate, melted and cooled
3 eggs
2 c. sugar
1 c. canola oil
2 c. grated zucchini
1 t. vanilla
2 c. flour
1 t. baking soda
1 t. salt
1 t. cinnamon
3/4 c. mini chocolate chips
Cinnamon/sugar mixture (1/4 c. sugar + 1 t. cinnamon)

Directions:
Directions:
Preheat oven to 350. Generously grease 2 8” x 4” loaf pans and sprinkle with cinnamon-sugar. Combine cooled chocolate, eggs, sugar, oil, zucchini and vanilla and beat well. Stir in sifted dry ingredients. Fold in chocolate chips. Divide evenly between pans, sprinkle with cinnamon-sugar and bake 60 to 70 minutes until done in center.
