Pie filling:

3 lb. container of sour cream
2 eggs
3/4 cup of white sugar

Quick Buttermilk Sweet Dough (pie crust):

1 pack if active dry yeast
1/4 cup of warm water
5 oz. of buttermilk
1 egg
3 cups of flour
1/4 cup of butter (softened)
1/4 cup of sugar
1 tsp. baking powder
1 tsp. of salt

Directions:
Preheat oven to 350 degrees. Mix all the pie filling ingredients together- sour cream, eggs, and sugar. Set aside. In a large mixing bowl. Dissolve yeast in warm water, add buttermilk, egg, butter, salt, baking powder, and sugar. Blend slowly, adding flour and scraping bowl occasionally. Stir in enough flour to make dough easy to handle (dough should remain soft and slightly sticky). Flour hands and split dough in half. This will be pie crust for two pies. Tear 2 pieces of wax paper and overlap them. Sprinkle with flour. Work one piece of dough with floured hands to stretch into a circle that will fit 9" pie plate. Spray pie pans with Baking spray that has flour in it. After fitting dough into pie pans, cover edges with aluminum foil. 4 inch strips will cover exposed crust and inner sides of the pie. Add filling, sprinkle top of pie with cinnamon, and bake for 1 hour.
