1/2 cup butter, softened
1 cup granulated sugar
2 large eggs
3 medium ripe bananas
7 1/5 ounces (1 1/2 cups) all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup buttermilk
1 teaspoon vanilla extract
1/2 cup chopped walnuts

Preheat oven to 325 degrees F.
Use an electric mixer on high speed to cream together the butter and sugar in a large mixing bowl.
Add the eggs and beat well on high speed until smooth.
Use a potato masher or large fork to mash the bananas in a medium bowl until no large chunks are visible. Scoop the mashed banana into the large mixing bowl with the other ingredients and beat well.
In a separate medium bowl mix together the flour, baking soda and salt. Add this to the wet mixture in the large bowl along with the buttermilk and vanilla and beat well until smooth.
Add the walnuts and beat until combined.
Grease the inside of an 8x4-inch loaf pan. Pour the batter into the pan and bake for 1 hour and 15 minutes or until a toothpick stuck into the center of the loaf comes out clean. Cool for at least 1 hour before removing banana bread from the pan. Slice into 10 even slices.
