1 cup of oil (I use vegetable oil)
1 can each: blackbeans, black eyed peas, small white beans, shoepeg corn
1/2 cup of sugar
1/2 cup of white vinegar
3 tbsp. white balsamic vinegar
1 red onion
1 yellow, orange, and red pepper

Directions:
Directions:
Place oil, white and balsamic vinear, and sugar in sauce pan. Bring to a boil. Let cool. Dice onion and peppers. Drain and rinse beans, corn, and black eyed peas. Put vegetables, beans, corn, and black eyed peas in bowl. Add liquid mixture. Add cilantro, salt, and pepper to taste. Serve with tortilla chips.
