Ingredients:
Ingredients:
6 quarts popped corn
1 cup butter, melted
2 cups brown sugar, packed
½ cup light corn syrup
1 tsp salt
1 tsp vanilla
½ tsp baking soda

Directions:
Directions:
Preheat oven to 200º. Pop corn (I use an air popper) and set aside in a very large (huge) bowl, buttered or sprayed with Pam. Mix butter, brown sugar, light corn syrup and salt in a 2-quart sauce pan and bring to a boil. Reduce heat to low and cook 5 minutes (maintaining boiling), no stirring. Remove from heat and quickly add vanilla and soda. Beat well, while mixture foams up. Pour over popped corn and stir to mix well. Spread over 2 cookie sheets, buttered or sprayed with Pam. Bake at 200º for one hour, stirring and turning every 20 minutes. Cool, break into pieces and store in a covered container.

Personal Notes:
It's been a tradition for me to make and take caramel pop corn to the office during the holidays. I never have any left over!
