3 leeks
3 tbsp. butter
2 onions, thinly sliced
1 red pepper, diced
5 potatoes, peeled and thinly sliced
½ tsp. thyme
1 bay leaf
5 c. chicken stock
¼ c. heavy cream
salt and pepper

Directions:
Directions:
Cut off and discard green part of leeks. Slit white stalks lengthwise twice. Let leeks soak in cold water for 5 minutes, then wash thoroughly to remove dirt. Remove and thinly slice.

Heat butter in a large pot over medium heat. Add leeks and onions, and season well. Partly cover and cook for 15 minutes.

Add red pepper and potatoes. Mix well and continue cooking for 10 minutes. Add seasonings and mix again. Pour in chicken stock and bring to a boil. Cook soup partly covered for 30 minutes over medium heat. Puree contents of pot using an emulsion blender. Incorporate cream and correct seasoning. Serve.
