2-Lrg Cans Sweet Potatoes ~ OR ~
6-Lrg Sweet Potatoes
2-Cups Fresh Cranberries
¾ Cup Brown Sugar
4-TBS Butter
½-Cup Orange Juice
5-Lrg. Green Apples, sliced into 1” pieces
½ Cup Chopped Walnuts or Pecans, Optional
3-TBS. Melted Butter
½ tsp. Cinnamon

Cook raw sweet potatoes in water to cover about 30-minutes, until barely tender. Drain and Cool. Peel and slice in ¼” slices. Layer ½ of slices in a buttered 1-1/2 qt casserole. Top with 1-Cup cranberries and 1-Cup apples & ¼ Cup Brown Sugar. Dot with butter. Add second layer ~ Layer with rest of potato slices, apples and cranberries. Sprinkle with ¼ C Brown Sugar and pour orange juice over casserole.

Cover & Bake 45-minutes at 350°. Combine last 4-ingredients and sprinkle on casserole last 10-minutes.
This recipe can be prepared 1-day ahead. The orange juice will keep the apples from turning brown.

This recipe is very easy to make. Don't be afraid to use canned sweet potatoes ~ they are quite good.
