2 eggs, lightly beaten
1/3 cup chicken stock
3/4 cup flour
2 tbsp soy sauce
1 tbsp mirin
1 cup shredded green cabbage
1 cup green beans, cut into 1-inch lengths
1 zucchini, cut into matchsticks
1 carrot, cut into matchsticks
1 green pepper, thinly sliced
3-4 green onions, thinly sliced
3 tbsp ketchup
1 tbsp worchestershire cause
1 tbsp soy sauce

Directions:

Cut up the vegetables and place them in a large bowl.

Beat eggs, and add stock, flour, soy sauce, and mirin. Whisk to combine into a batter, then pour over vegetables. Toss until thoroughly combined.

Heat a skillet to medium-high heat. Add a couple of tablespoons of vegetable oil. Add a ladleful of the vegetable mix and cook a couple of minutes each side, until batter is a nice brown (you can normally see the edges brown, and use that as a guide). Flip and cook other side a couple of minutes. Remove to a pan and keep warm in the oven.

Cook the rest of the vegetable mix in the same fashion--you can probably cook three omelettes at the same time.

Once all the Okonomiyaki has been cooked, whisk together the ketchup, worchestershire sauce, and soy sauce. Serve sauce alongside Okonomiyaki.
