Ingredients:
Ingredients:
4 cans of boneless, skinless salmon
1 sleeve of Saltine crackers
2 eggs

Directions:
Directions:
Drain the liquid from 2 cans of the salmon into a bowl. Reserve the liquid from the 3rd can in case the mix is too dry. Toss the liquid from the 4th can. Beat the eggs in the bowl with the salmon liquid. Add the salmon from all four cans and toss with a fork. Smash the crackers in a large Ziplock (the size of the crumbs is debatable -- my mom likes some big crumbs, but Gran-Gran likes them finer). Add to the salmon mixture. The mixture should be damp enough to form into patties. If it is too dry, then add some of the reserved liquid. Form the mixture into patties (I usually get about 7) and then fry in oil until nice and brown on both sides.
