½ Cup Butter, softened
1 Cup Dairy Sour Cream
1-Egg
1 Can (16 oz.) Whole Kernel Corn, Drained
1-Can (16 oz.) Cream Style Corn
1-Package Jiffy Corn Muffin Mix
2-Cups Grated Cheddar Cheese

Directions:

In a large bowl, mix together butter, sour cream, 1-cup of cheese and egg. Stir in cans of corn and corn muffin mix. Spoon mixture into buttered 9x9” (2-quart) casserole dish. Bake in preheated oven at 350-degrees for 25 to 30-minutes. If recipe is doubled, you can plan to increase the baking time quite a bit.

Place one cup of cheddar cheese on top of casserole after baking and bake until melted.

Note: You can easily double this recipe.

This is a recipe that I got from the Franklin Lakes Methodist Church covered dish dinners. It is one of Nick Beckmann's favorite dishes. A good Thanksgiving dish.
