Crust for 2-crust pie
16 oz. bag of mixed vegetables
1 large potato, boiled until just done and cubed
1/3 cup butter
1/3 cup all-purpose flour
1/2 t. salt
1/4 t. pepper
1 3/4 cups chicken broth
1/2 cup milk
2 1/2 cups shredded cooked chicken or turkey (rotisserie chicken works well)

Layer 1 crust in a pie pan. Cook potato and cube. In a small saucepan melt butter. Stir in flour, salt and pepper. Cook 1 minute. Gradually add broth and milk. Cook and stir until bubbly and thickened. Stir in chicken, vegetables and potato. Pour into crust. Cover with the top crust, flute edges and make air slits. Bake at 425 for 30-40 minutes or until golden brown. Let sit for 15 minutes before cutting.
