1 T. unsalted butter plus more for diah
8 ounces elbow macaroni
2 cups half and half
3 large eggs
½ tsp. paprika
2 Cups shredded cheddar cheese (about 6oz.)
1 cup grated muenster cheese (about 3oz,)
1 cup grated provolone cheese (about 3 oz.)
½ cup whole-milk mozzarella cheese (about 2oz.)

Directions:
Preheat oven to 350º. Butter a shallow 2 quart baking dish; set aside. Bring a large pot of salted water to boil. Add pasta and cook according to package directions for al dente. Drain and transfer to medium bowl add butter and toss until melted. Whisk together in large bowl; half and half, eggs, paprika, 1 tsp. salt and pepper to taste. Add the pasta and 1½ cups cheddar cheese, muenster and provolone; toss. Transfer to prepared baking dish; top with remaining ½ cup cheddar cheese. Bake until bubbly around the edges and no longer jiggly, about 30-35 minutes. Let cool for about 30 minutes before slicing.
