1¾ cups all purpose flour
1¾ cups sugar
¾ tsp. salt
¾ tsp. baking soda
¼ tsp. baking powder
⅛ tsp. ground ginger
1 tsp. cinnamon
¼ tsp. nutmeg
1 cup sweet potato (mashed and drained)
½ cup oil
2 eggs

Mix potatoes, oil and eggs; sift together dry ingredients and add to potato, egg, and oil mixture. Bake at 375º for 20-25 minutes.
