1 lb. shredded cheese - Velvetta 1 lb pkg or pre- shredded packages will work
1 (4oz) package cream cheese softened
2/3 cup finely chopped pecans
2 Tbs fresh lemon juice
2 cloves garlic, chopped
1/4 cup Paprika sufficient to roll the cheese logs in till covered

In medium bowl, mix everything except Paprika. You can use a food processor or your hands. Form into 2 or 3 logs by dividing mixture and roll in wax paper. Roll each log in Paprika, roll in wax paper and chill. Wrap each log in foil and refrigerate. You can slice each log into rounds as needed and serve with crackers. I like Ritz!

Traditional Family Recipe Jerry's mother, Jenola made this favorite for Christmas. I remember everyone going straight to the refrigerator to get these little "logs" which were carefully wrapped in foil and stacked. She also gave them as Christmas gifts along with a box of Ritz crackers. I remember her using an old fashioned metal hand food "grinder." I use an electric food processor but they just aren't as special!
