3 tbsp ghee or coconut oil
1 lb ground chicken
8 oz sliced mushrooms
2 ribs celery, chopped
3 tbsp hot sauce
2 tbsp homemade mayo
4 bell peppers, hallowed out
1 cup brown rice

Directions:
Directions:
Prepare rice and preheat oven to 350 degrees.

Heat up coconut oil in skillet and add ground chicken. Add sliced mushroom and cook over medium heat until mushrooms begin to brown. Add celery and cook until softened. Remove chicken mixture to a bowl and mix enough hot sauce to coat everything. Mix in a little homemade mayo and rice. Spoon mixture into 4 bell peppers.

Bake for 25 minutes or until peppers begin to soften up.

Remove and allow to cool for a few moments. Poke a hole in the bottom of each pepper to drain off additional moisture.
