4 sweet potatoes
1 1/2 lbs ground beef
1/2 onion, chopped
1/2 green pepper, chopped
1/2 red pepper, chopped
1/4 cup celery, chopped
1 clove garlic, minced
1 tbsp chili powder
1 tsp cumin
1 tbsp honey
1 can diced tomatoes
1 can tomato sauce
4 tbsp BBQ sauce

Directions:

Preheat oven to 400 degrees.

Pierce each sweet potato several times with a fork. Place the sweet potatoes on a rimmed baking sheet lined with foil. Bake until tender, about 45 minutes. Saute the onions, garlic and celery together in a skillet until onions are tender. Add beef to skillet and brown meat. Add spices, honey and bell peppers to skillet. Pour in the can of diced tomatoes with liquids, BBQ and tomato sauce. Simmer all ingredients together on low for about 15 minutes. Finish with salt and pepper to taste. Cut sweet potatoes in half and scoop out a portion to form a little bowl. Fill with sloppy joe mixture or slice up sweet potatoes into wedges. Serve hot and enjoy.
