Ingredients: 1 1/2 cups corn - fresh,canned,or frozen 1 1/2 cups black beans 1/2 small red onion diced 1 cup diced fresh tomato 1 avocado, chopped into small chunks (I like to add just before serving) 1/4 cup chopped fresh cilantro 1/4 cup olive oil 1/4 cup red wine vinegar Juice of 1 lime 1 clove of garlic, minced 1 tsp salt Pinch ground black pepper Pinch cayenne peppee Optional: 1 small jalapeņo pepper, seeded and chopped. Or you could use bell pepper - any color

Directions:Add everything together in a large bowl. Stir. Taste and add more salt/cayenne/pepper as needed. Cover and let sit in the refrigerator for 1 hour or up to one day before serving. The lime juice and red onion keeps the avocado from turning brown. But you can wait till you get ready to serve to add the avocado if you make the recipe several hours before serving.
Serve with corn chips like Tostitos or fresh restaurant style. I like the "scoops" variety so everybody can get more dip on their chip!
Note: You can also add diced fresh mango for a fruity flavor |
