Beef and Spinach Lasagna Recipe

1 pound lean ground beef
2 jars (24 ounces each) tomato sauce
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
2 cups ricotta cheese
2 cups (8 ounces) shredded part-skim mozzarella cheese
1/2 cup Parmesan Cheese
1 box of no-cook lasagna noodles

In a large skillet, cook beef over medium heat until meat is no longer pink; drain.
Microwave (if not already thawed) chopped spinach and squeeze dry.

Spread 1-1/2 cups tomato sauce into a greased 13-in. x 9-in. baking dish.
Top with lasagna noodles.
Spread 1-1/2 cups sauce to edges of noodles.
Top with dollops of ricotta cheese.
Top with spoonful's of meat mixture.
Sprinkle a little garlic powder of meat mixture.
Crumble in spinach over top.
Add layer of mozzarella cheese.
Sprinkle light layer of parmesan cheese.

Repeat layers....

Top with the remaining noodles, sauce and mozzarella cheese. I also like to sprinkle more parmesan cheese over top of the mozzarella to fill in the gaps.

Cover and bake at 375° for 30 minutes. Uncover; bake 10-15 minutes longer or until bubbly. Let stand for 10 minutes before cutting.

** lasagna is always better the next day. If you don't want to make ahead I make during the day and bake for approx. 20 mins. Then let sit and then bake again at night for dinner.
