Ingredients: 2 pounds chicken thighs or breasts. (About 6 pieces) Can use skinless/boneless if desired 1/2 cup fresh pesto 1 (14 oz.) can Italian style diced tomatoes (May use more if you need more gravy) 1 1/2 cup Mozzarella cheese, shredded 2 Tbsp fresh basil, finally chopped - optional

Directions:1. Preheat oven to 400º. Spray a 9 or 10 inch baking or casserole dish with non-stick spray.
2. Pour can of tomatoes into pan and spread evenly over the bottom. Nestle chicken pieces into tomatoes. Spread about a Tablespoon of pesto on top of each piece of chicken
3. Bake for 30 - 40 minutes until chicken is cooked through. This will depend of the size and thickness of the chicken pieces.
Top with shredded cheese, and return to oven for 5 minutes until melted.
5. Remove from oven and sprinkle with basil. May store leftovers in the refrigerator.
Note: May be prepared in advance and refrigerated until cooking. Makes wonderful gravy to serve over pasta or rice. |
