Zucchini Soup Recipe

5-6 zucchini squash, sliced
1 yellow onion, sliced
4 cups chicken broth
1 heaping teaspoon mild curry powder
1 teaspoon oregano
1 teaspoon basil
3 teaspoon olive oil
1 tablespoon butter
1 lemon
˝ cup plain yogurt
salt and pepper

Directions:
Directions:
Heat olive oil and butter in large stock pot. Sauté onion for three minutes. Add sliced zucchini, oregano, and basil and sauté an additional five minutes, stirring occasionally. Stir in curry powder. Cover and let simmer over medium low heat for about 10 minutes. Add chicken broth (use enough broth to cover zucchini onion mix- use more if you want thinner soup). Let simmer for 15 minutes.

Zest lemon and set aside. Juice lemon and mix juice in with yogurt. Make sure the yogurt mixture is not too thin. If you have too much lemon juice, add it to the soup.

Add salt and pepper to taste. Puree zucchini mixture until smooth. Ladle into bowls and top with yogurt mixture. Sprinkle lemon zest on top and serve.
