1 cup skim or 1% milk
1 cup flour

1 tsp salt
2 large eggs
1 Tbsp oil

2 Tbsp butter cut into 6 even pieces

Directions:
Directions:
Preheat oven to 400º

Prepare popover pan with non-cook spray

Blend milk and flour in blender on low for 2 minutes
Add the rest of the ingredients and blend for 1 minute

Place 1 piece of cut butter in each cup and place back in preheated oven until butter is bubbly, about 1 minute. Fill each cup half full with batter and bake 20 minutes. Reduce temperature to 300º and continue baking 20 minutes.

Popovers are best right from the oven.
Serve with butter, jams, or other sweet or savory spreads.

Batter can be made ahead of time and stored in the refrigerator. Bring batter back to room temperature before baking.
