1 zucchini
1 yellow onion
2 cloves garlic
2 t. thyme
10 oz. ground beef
6 oz. spaghetti
2 T. soy sauce
1/2 T. Italian Seasoning
1 box crushed tomatoes
1/4 c. parmesan cheese
1 t. pepperolio

Directions:
Directions:
Bring pot of salted water to boil. Quarter zucchini lengthwise, then cut into 1/2 inch pieces. Halve, peel & dice onion. Mince garlic. Heat a drizzle of olive oil in a large pan over medium-high heat. Add beef, breaking up beef into pieces. Cook, tossing, until browned but not yet cooked through. 4-5 minutes. Season with salt & pepper. Once water is boiling, add spaghetti. Cook until al dente. Carefully scoop and reserve 1/2 c. water. Add onion and zucchini to pan with beef. Cook, tossing, until softened, about 5 minutes. Toss in garlic, thyme, soy sauce and Italian seasoning. Cook until fragrant. Add tomatoes and reserved pasta water to pan. Bring to a boil, then reduce heat and let simmer until thick and saucy (approx. 5 minutes). Season with salt & pepper. Add spaghetti to pan with ragu and toss to combine. Sprinkle with parmesan cheese and pepperolio.
