1.5 cups flour (187 grams)
1/4 cup + 1.5 tbsp cornstarch (96 grams)
1.5 tsp baking powder
0.25 tsp baking soda
3/4 cup (150 grams) sugar + 2 tbsp divided
3 eggs
1 cup (225 grams) mascarpone
2.5 tbsp vegetable oil
0.25 tsp salt

Preheat oven to 340º

Lightly grease a 9" springform pan
clean and peel pears: cube one and slice the other
In a medium bowl at medium speed beat eggs and sugar until creamy ; add mascarpone and continue beating until smooth
In a medium bowl, whisk together flour, salt ,corn starch, baking powder, and soda
Using a wooden spoon, stir the flour mixture into the creamed mixture. Add the oil and stir to combine.
Fold in the cubed pears
Spoon into prepared pan
Top with sliced pears and sprinkle with 40 grams sugar ( 2 tbsp)

Bake for 45-60 minutes or until toothpick clean
