Preheat oven to 350º.
1 cup sugar
2 eggs
½ cup shortening
4 large bananas or 5 smaller ones
2 cups flour
1 teaspoon baking soda
½ teaspoon salt
1 cup chopped pecans or walnuts

Directions:
Directions:
Cream sugar and shortening.
Mash bananas. Add to creamed mixture.
Add eggs to creamed mixture.
Add flour, baking soda, salt together in sifter.
Sift into the creamed mixture.
Beat until fairly smooth, but not too long.
Mix in nuts.
Pour into greased/floured pan or two round layer pans.
Bake 40 minutes in 350º oven.
Cake is done when toothpick stuck into middle comes out clean.

This recipe is from aunt Phoebe Lattin. Grandma Dean's aunt that was married to Earl Lattin. Most important...this was uncle Teddy Lattin's favorite birthday cake.
