Preheat oven to 350º

2 eggs
1 ½ cup sugar
1 teaspoon vanilla extract

½ cup flour (That's right. It says ½ cup.)
2 ½ teaspoons baking powder
¼ teaspoon salt

1 cup chopped apple
1 cup coarsely chopped pecans or walnuts

Directions:
Directions:
Cream eggs and sugar.
Add flour sifted with baking powder and salt.
Add apples and nuts.
Grease and dust with flour a 9 X 13 baking pan.
Pour batter into baking pan.
Bake at 350º for about 25 to 30 minutes.
Grandma said it will rise and fall.

Serve with whipped cream or ice cream.

This recipe is from Grandma Lattin. She baked bread about every other week so most of the bread we had there was hers. She had a flour bin in her kitchen that was always filled. Aunt Ida would bring eggs from her chickens to Grandma and Granddad.
