2 pounds lean ground beef or ground turkey
1 cup onion, diced
1 cup celery, diced
1 cup mushrooms, diced (optional)
3 tbsp cilantro, chopped
3 tsp minced garlic
2 tsp sea salt
1 tsp ground black pepper
1 tsp dried oregano
1 tsp dried basil
1 cup baby spinach
2-3 colored bell peppers, chopped
1 cup brown rice

Directions:
Directions:
Prepare rice.

In a large nonstick skillet lightly brown meat, onion and celery over medium heat. Turn heat to low and add mushrooms, bell peppers and spices. Once meat is completely browned, remove from heat and stir in spinach.

Serve meat mixture on top a bed of rice.
