4 boneless chicken breasts, thinly sliced
2 tablespoons olive oil
8 ounces sliced mushrooms
1 cup chopped spinach
Salt and pepper

For the sauce:

1/4 cup butter
2 garlic cloves, mminced
1 tablespoon flour
1/2 cup chicken broth
1 cup Half and Half
1/2 cup grated Parmesan cheese
1/2 teaspoon onion powder
Optional: sun-dried tomatoes

Directions:
Directions:
Season chicken with salt and pepper and cook 3-5 minutes per side in olive oil, and remove. Add sliced mushrooms and cook until tender. Remove.

Add butter to pan and melt. Add garlic and cook until tender. Whisk in flour until it thickens. Slowly whisk in broth, Half and Half, cheese, and onion powder until mixed. Add spinach and sun-dried tomatoes (if using) and simmer until it thickens.

Return mushrooms and chicken to the sauce. Serve over your favorite pasta.
