Any size beef roast ( chuck or rump)
Potatoes ( whole if medium or small)
Carrots ( whole or cut)
Onions (whole, medium)
Gravy- see This and That section in this book.
Salt and pepper to taste

Directions:
In a large pot ( I use my turkey roaster with top) make gravy. Add roast and onion to gravy. Cover and cook 350º for about 10 minutes a pound. Turn roast and add carrots and potatoes. Remember that carrots need to cook longer than potatoes. Potatoes need to cook about an hour. Cover and bake for about 30 minutes a pound. Remove cover and bake for 15 to 30 minutes.

You really need enough gravy to almost cover the vegetables.

I really like this roast cooked long, so it just falls apart. Sometimes, I have to remove the vegetables if they are done first.
