1 inexpensive roast (need the fat)
Some flour
About 3 T oil
1/2 medium onion, chopped
3 or 4 celery ribs, chopped
salt and pepper
1 15 oz can chopped tomatoes
1 15 oz can tomato sauce
About 6 medium potatoes
1 pkg mixed frozen vegetables (plus C 1 frozen limas, if desired)

Directions:
Directions:
Flour roast and brown all sides in oil in soup pot. Add onion, cook a minute ... then, fill pot with water (maybe about 5 cups, cover roast with at least 2"). Add celery, tomatoes, and tomato sauce, and salt & pepper. Cook long time, low, maybe 2 hours, covered. When roast is tender, add potatoes and veggies. Cook about 45 - 1 hour

(chuck pot roast is a good one)

I take the roast out of pot and pull off good bite sized pieces of meat. Then, put meat back in pot. Since it has fat on it, you wanna get that out of the soup.
