Blueberry Cobbler Recipe

½ cup sugar
1½ Tbls flour
2½ cups fresh or frozen blueberries
1 Tbls lemon juice

Topping:
1 cup flour
½ tsp baking powder
½ tsp salt
2 Tbls sugar
¼ cup shortening
⅓ cup milk

Directions:
Directions:
Combine sugar and flour.
Add blueberries (thawed if they were frozen).
Add lemon juice and mix all lightly.
Place in 1 quart casserole.

Topping:
Sift flour and add baking powder, salt and sugar. Sift again.
Cut in shortening with a pastry blender until mix resembles coarse corn meal.
Add enough milk to make a soft dough.
Roll or pat out dough to fit on top of the casserole and place it over berries.

Bake 400º for 40 minutes.

Serves 4-6
