1½ pounds ground beef
1 small onion, chopped
1 package taco seasoning
16 ounce can Ranch Style beans or pinto beans
1 can Rotel tomatoes
1 can cream of mushroom soup
16 ounce bag tortilla chips, crumbled
2 cups shredded cheddar cheese

Directions:
Directions:
Brown ground beef with onions and taco seasoning. Drain fat off meat. Salt and pepper to taste. Layer large casserole dish with ½ of chips. Place meat in the center of the dish. Pour beans, juice and all, over meat. Layer ½ of cheese and rest of chips. Mix Rotel and soup together. Pour over dish. Top with remaining cheese.

Cover with foil and bake at 350º for 30 to 40 minutes, or until cheese is melted.

This recipe is referred to as the "Bible Dish" because a friend of mine found it tucked in a Bible at church. She copied it down and made it, and it was so good that she shared it with me. That has been 30 years ago and I still make it today.
