1 lb. boneless skinless chicken breasts cut into 1 inch pieces
1 c. slivered onions
1 c. thinly sliced celery
2 tbs. all-purpose flour
3 1/2 c. chicken broth
2 c. peeled (1/2 in thick) sliced carrots
3/4 tsp. dried thyme, divided
1/4 tsp. pepper
1 c. reduced-fat bisquick
1/3 c. fat free milk

Coat a dutch oven with cooking spray, and place over medium high heat until hot. Add chicken and onion and sauté 5 minutes. Add celery and sauté 2 minutes. Sprinkle flour over chicken mixture and sauté 1 minute. Gradually add broth stirring until well blended. Add carrot, 1/2 teaspoon of thyme, and pepper. Cover, reduce heat, and simmer 10 minutes, stirring occasionally.

Combine remaining 1/4 teaspoon of thyme, bisqiick, and milk in small bowl. Stir well. Spoon dough by tablespoon into 12 mounds on top of chicken mixture. Reduce heat to medium-low. Cover and cook 15 minutes or until dumplings are done (do not boil).
