2 pounds pork sausage (I use 1 pound mild and 1 pound hot)
1 cup chopped bell pepper (optional)
½ cup onion
3 cups frozen shredded hash brown potatoes
2 cups shredded cheddar cheese
1 cup Original Bisquick mix
2 cups milk
6 eggs
¼ teaspoon pepper (I use a little more)

Directions:
Directions:
Heat oven to 400º. Grease 13x9 baking dish. Cook sausage, bell pepper and onion over medium heat, stirring occasionally, until sausage is no longer pink, and drain. Stir sausage mixture, potatoes and 1½ cups of the cheese and place in the baking dish.

Stir Bisquick, milk, pepper and eggs until blended and pour into baking dish on top of sausage mixture.

Bake uncovered for 40-45 minutes. Insert knife in the middle and make sure it comes out clean. Sprinkle with remaining cheese. Bake 1 to 2 minutes longer or just until cheese is melted. Cool 5 minutes.
