Ingredients: 6 cups water 1 1/2 tsp salt 1 Tbsp butter 3 cups regular (not "minute" ) rice. I prefer Basmati rice but any type will work Each cup of raw rice yields about 3 cups of cooked rice ( I use 1/2 cup cooked rice for each dinner serving)
Note: You can substitute Coconut Milk or broth for half the water for a special flavored rice dish

Directions:Pour water into a large saucepan with a wide bottom, and add salt and butter. Bring to a boil Stir in rice and reduce heat to a simmer. Cover and cook until water is absorbed - about 20 minutes Let stand for 5 minutes Fluff with a fork to reduce steam and serve.
Tip for keeping cooked rice warm: Place a double layer of paper towels under the lid of the saucepan so that steam will be absorbed by the towels and not condense, which would make the rice sticky Busy Family Tip: Cooked rice freezes well in freeezer bags. Just heat in the microwave for about 2 minutes. No cooking and no pan to wash! |

Notes: My grandmother rarely cooked rice as it was not grown in southeast Arkansas. When she did, it was served with sugar as a cereal or as rice pudding for dessert. Now the state is the largest producer of rice in America. As a young bride I tried at least 10 methods to cook fluffy rice and keep it from becoming sticky. Jerry was accustomed to eating it almost everyday at home. Nancy uses this method, and I believe it is the easiest and best way of all. Love to all, Mimi
