12-18 large eggs
1 small box frozen chopped spinach, thawed
1/2 pound fresh mushrooms
1 can stewed tomatoes
6 ounces feta cheese
1/4 cup Half and Half (or milk)

Directions:
Directions:
Preheat oven to 350º. Spray 9" x 13" x 2" pan with oil.

Beat eggs with Half and Half. Pour mixture in prepared pan. Squeeze spinach until pretty dry and put into eggs along with stewed tomatoes and mushrooms. Sprinkle feta cheese evenly over top, then bake for 1 hour
