4 Lb. Cucumbers sliced no thicker than 1/4"
3 Onions sliced no thicker than 1/4"
1/2 C. Coarse Salt-non-iodized
5 C. White Sugar
5 C. Cider Vinegar (3-4% if you can find it)
1 1/2 tsp. turmeric
1 1/2 tsp.Celery Seed

Mix Sliced Cucumbers & onions with saltin a glass, enamel or plastic container. Do not use metal container. Cover with very cold water & ice cubes. Let sit about 3 Hrs.

Mix Sugar, vinegar,turmeric,& celery seed and simmer 30 min. Pour cold water off cucumbers & pack in pint size canning jars. Cover with hot liquid, leaving 1" head space between liquid & hand tightened lids. Process 10 Min. in Hot Water bath. Remove carefully. Protect from drafts. leave undisturbed while cooling. Check that all lids have sealed. Ready to use in about 14 days.
