3/4 c. sugar
1/3 c. flour
1/4 tsp. salt
2 c. milk
1 egg, well beaten
2 TBS butter
1 tsp vanilla
2 bananas
9-inch baked pie crust
whipped cream

Directions:
Directions:
Combine sugar, flour and salt in saucepan. Gradually stir in milk and cook and stir over medium heat until mixture boils and thickens. Remove from heat. Stir small amount of hot mixture into beaten egg.

Return to hot mixture. Bring whole thing to boil again, stirring constantly.

Cook for one more minute and remove from heat. Add butter and vanilla. Cool to room temperature. To keep “skin” from forming on top of pudding, place waxed paper directly on top, touching pudding.

Slice bananas into pie crust. Pour cooled pudding over the top of bananas and refrigerate until set (at least 2 hours) top with whipped cream.
