Crust:
1 cup flour
1/2 cup butter
1/4 cup confectioners powdered sugar

Filling:
2 eggs
3/4-1 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla
2 or 3 tablespoons real lemon juice (depending on desired lemon taste)

Directions:
Directions:
Preheat oven to 325-350º. Press crust mixture evenly in 8" or 9" glass baking dish. Bake for 10 minutes.

Beat filling ingredients together and pour over crust. Bake for 20-25 minutes. Refrigerate when cool. Sprinkle with powdered sugar. Cut into squares when cold.

These are best when 3-5 days old. You can double the recipe and bake in a 9" x 13" glass baking pan.
