1/2 cup sugar
1 tablespoon flour
1 teaspoon salt
2 teaspoons grated orange peel
3/4 cup orange juice
2 tablespoons butter or margarine
2 1/2 pounds carrots, peeled and cut diagonally in 1/4 inch thick slices (8 cups), cooked and drained

Directions:
Directions:
Mix sugar, flour, and salt in medium bowl. Stir in orange peel and juice. Put in saucepan and bring to a boil over medium-high heat. Reduce heat to low; stir in butter and simmer for 2 minutes, or until thick and syrupy. Add carrots; stir to coat and glaze.Transfer to serving dish

If I am in a hurry, I buy the small carrots that are already peeled. It saves time! You can add a little more flour if you prefer a thicker sauce.
