4½ cups water
¼ cup canola oil
¼ cup honey
1 Tbsp salt
2 Tbsp instant yeast, 1/4 cup dough enhancer
¼ cup gluten
9 cups whole wheat flour

Directions:
Directions:
Heat water to 120º then place in large bowl (Bosch mixer). Add oil, honey, salt, yeast, dough enhancer and gluten; mix for 1 minute. Add whole wheat flour and mix for 10 minutes. The dough will scour the side of the bowl clear. Divide into 4 equal portions. Roll, tuck under and place in bread pans. Place pans on rack, cover with dish towel and let rise for 30 minutes. After 20 minutes, turn on oven and preheat to 375º. Bake loaves for 10 minutes at 375º and then lower temperature to 350º. Continue to bake for 30 minutes, for a total cooking time of 40 minutes. Place bread on racks to cool. Brush oil on top of cooked loaves.
