Pie:
1¼ cups sugar
1¼ cup water
1 Tbsp butter
5 Tbsp cornstarch
3 Tbsp water
3 egg yolks (save whites for meringue)
2 Tbsp milk
¼ tsp salt
Juice and rind of 3 lemons (⅓ cup per pie)
Baked pie shell

Meringue:
3 egg whites
3 Tbsp sugar

Directions:
Directions:
Mix sugar, water and butter and bring to a boil. Lower heat. Add cornstarch mixed with the 3 Tbsp water. Cook until thick, stirring constantly. Beat egg yolks, milk, and salt; add to mixture. Cook over medium heat until thick, stirring constantly. Remove from heat. Add lemon juice and peel. Cool; pour into baked 8-inch pie shell. For meringue, Beat egg whites until stiff; add sugar slowly. Spread on pie. Bake at 350º until meringue is golden brown.
