1/2 cup butter
1/2-2/3 cup white sugar ( used more or less depending on how sweet you like your cornbread)
1 cup buttermilk

1/2 tsp. baking soda
1 cup yellow cornmeal
1 cup all purpose flour
1/2 tsp. salt

Directions:
Directions:
Preheat oven to 375 degrees.
Grease an 8 inch square pan ( or 12 hole muffin tin).
Melt butter. Stir in sugar. Add eggs and beat until blended. Combine buttermilk and baking soda. Stir into wet mixture.
Stir in cornmeal, flour, and salt until well blended with a few lumps remaining. Don't overmix. Pour batter into prepared pan.
Bake for 30-40 minutes or until toothpick inserted into bread comes out clean. If making muffins , bake for approx. 25 minutes.

NOTE:
If you don't have buttermilk, use 1 cup regular milk mixed with 1 Tbsp. white vinegar. Mix the milk and vinegar together and let sit for a few minutes. Now you have buttermilk!!!
