Ingredients: 1 box (4 ounces) German sweet chocolate ¼ cup butter 1½ cups sugar ½ teaspoon salt 3 tablespoons cornstarch 1 can (12 ounce) evaporated milk 2 large eggs 1 teaspoon Mexican vanilla 1¼ cups coconut ½ cup chopped pecans

Directions:Step I (Chocolate): Place butter and chocolate into a microwaveable bowl and heat in microwave until completely melted. Stir often until smooth and creamy. Step II (Dry Ingredients): In a separate bowl, stir together sugar, salt and cornstarch. Step III (Liquid Ingredients): While using a wire whisk, mix well together eggs, milk and vanilla in a separate bowl. Step IV (Incorporating): Slowly pour enough liquid ingredients into dry ingredients to form a paste. Stir until smooth. Continue using wire whisk and add remaining liquids. Beat until dry and wet ingredients are mixed completely. Continue beating and slowly add chocolate mixture by pouring in a thin stream. Beat until chocolate is completely incorporated and mixture is very smooth. No lumps should remain. Step V (Assembly) Sprinkle pecans and coconut onto the bottom of an unbaked pie crust. Pour chocolate filling over nuts and coconut. Bake at 375º for approximately 50-60 minutes, or until slightly brown and almost set in center. |
