4 Tbs butter
2 Tbs olive oil
1/2 C chopped yellow onion
2 cloves garlic
1 1/2 C arborio rice
3 ears of corn- kernels cut off the cob
1 tsp salt
1/4 tsp pepper
32 oz veggie broth
1/4 C half & half
1/4 C grated parmesan
1/4 C chopped fresh basil
1 C halved cherry tomatoes

Directions:
Directions:
Select sauté setting on IP & cook onions & garlic in butter & olive oil until soft (5min).
Add rice & continue to sauté 2-3 min-when grains of rice start to turn translucent.
Add corn, salt, pepper & veggie broth- stir.
Lock lid & set to HIGH pressure for 6 min.
When time is up do a quick release & stir in Half & Half, parmesan, basil & tomato.
Serve. Enjoy!
