1 box yellow cake mix (I use Duncan Hines)
2 - one ounce size instant vanilla pudding mix. Make per package directions
1 cup chopped walnuts (omit if nuts allergies; can substitute mini chocolate chips)
1 can (22-24 ounce size) crushed pineapple, drained
1 tub (8 ounces) whipped cream (Cool Whip)
1, 8 ounce size sweetened coconut (if you prefer, may use sprinkles or any other topping of choice)

Directions:
Directions:
Bake cake per package directions in a 9" x 13" pan. Set aside to cool.

Start layering -
Spread prepared pudding on cooled cake, then add the pineapple and sprinkle with chopped nuts. Spread whipped cream evenly over nuts and top with coconut. Chill for at least 2 hours before serving.

This was my 'go to' cake to take to pot luck dinners while working at Southwest General Hospital. The cake was originally created by a Home Economics teacher, whose sister was one of my co-workers in the ICU-CCU.
