Yellow Cake Mix
Seedless Raspberry Preserves
Fine Coconut

Nunu's Vanilla Icing:
1 Tbsp. White Shortening (Crisco)
1 Cup Confectioners' Sugar
1 Tsp. Vanilla
1-2 Tbsp. Evaporated Milk

Directions:
Directions:
1. Prepare (grease and flour) mini muffin pan or for larger ones regular muffin pans.
2. Pour batter ¾ of the way into muffin pan and bake as directed. Remove to cool.
3. Pour seedless raspberry preserves into a bowl. Microwave for a few seconds (25) to warm. Stir to soften so it's smooth. Dip muffin into jelly. Take spoon to help cover muffin with jelly.
4. Immediately roll in super fine coconut to cover. Place muffin upside down (The top of the muffin is the bottom of the Lafayette).
5.Make icing. Put in sandwich bag. Cut a small hole in the corner of bag to make it easier to squeeze out. Circle icing on top of Lafayette. Put a dab of raspberry preserve in the center.

Optional Filling:
A. You can use an injector to squeeze some preserves into the center after they are baked.
B. Before cooking. Place ¼ of the batter into prepared pan, dot a tiny bit of preserves in the center, then top with batter until pan is ¾ full.
