4 Tbsp unsalted butter
1 medium onion, chopped
2 leeks, chopped (white part only)
1 large shallot, chopped
1 stalk of celery, chopped
2 medium yukon gold potatoes, peeled/cut into cubes (3 cups)
1 small celery root, peeled/cut into cubes (1½ cups)
1 tsp salt
1 tsp white pepper
4 cups of chicken stock

Directions:
Directions:
Melt butter in a deep saucepan or dutch oven and saute onion and shallots over medium heat ~ 5 minutes. Add leeks/celery. Turn heat to very low, cover pot with tight lid and cook ~ 10-15 minutes. Add potatoes, celery root, salt, pepper and 1½ cups stock. Bring to boil and simmer. Cook uncovered until potatoes/celery root are tender ~ 10-15 minutes.

Transfer mixture to a food processor and puree until smooth. Return to dutch oven and add remainder of stock. simmer for 5 minutes, adjust seasonings before serving.

Yield: 6 servings
