1 1/2 cups all-purpose flour
1/2 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup chopped nuts, or 3/4 cup chocolate chips to substitute if allergic to nuts
2 large eggs, slightly beaten
1/4 cup vegetable oil
1 1/2 cups mashed, overripe bananas (about 3 large)
1 teaspoon vanilla extract

Preheat oven to 350º.
Grease bundt pan, or if making cupcakes, use muffin liners. Stir together the dry ingredients and nuts or chocolate chips.By incorporating them wit the flour, nuts or chips will not sink to the bottom of the pan.Combine all wet ingredients and add all at once to dry ingredients. Stir to combine both until just moistened.

Bake: 1 loaf pan for 50-55 minutes
3, 5 3/4" x 3/4"x 2" loaf pans for 40 minutes
6 mini loaf pans (4 1/2"x 2 1/2"x 1") for 30 minutes
12 muffins for 25-30 minutes or until toothpick comes out clean
