Ingredients: The amounts are estimates - make this to your taste.
1 pound ground beef
1 large onion - chopped
salt and pepper
1 or 2 cans of refried beans
1 can chopped green chilies
2-3 cups shredded jack or mild cheddar cheese
¾ cup taco sauce
tortilla chips for dipping
garnish ideas: chopped green onion; chopped black olives, guacamole (mounded in center); sour cream.

Directions: |
Directions:Brown the ground beef and add chopped onion until meat is browned and cooked through. Discard any excess fat. Season with salt and pepper.
Spread the refried beans in a 9x13 pan. Top evenly with meat. Sprinkle chopped green chilies over beans and meat. Cover evenly with cheese and drizzle with taco sauce.
Can cover and chill at this point if you are making it ahead.
Bake uncovered in 400º oven for 20-25 minutes or until hot throughout.
Remove from oven and garnish with some or all of the suggested garnishes. Serve immediately with the chips. |
